hot. The intensity of the meat rises with the amount.
mole [MOH-lay]
Ours is tomato based, with notes of chocolate and ancho chili, onion,
garlic & ground pumpkin seed. Not hot, delicious. The chocolate
contributes richness to the sauce without adding over sweetness.
verde [VEHR-deh]
Our version of Mexican green sauce is a combination of roasted tomatillo,
roasted garlic, roasted onion, frensh cilantro, and lime... mild, tangy,
delicious.
yucca [YUHK-uh]
The yuca is a root similar to a potato. It has a tough brown skin which,
when peeled, reveals a crisp, white flesh. Our is gently spiced and
mushed, served without dairy.
jicama [HEE-kah-mah]
Often referred to as the Mexican potato, this large, bulbous root vegetable
has a thin brown skin and white crunchy flesh. It has sweet, nutty flavor
and is similar in texture to a water chesnut.
chayote [chi-OH-tay]
This gourdlike fruit is about the size and shape of a very large pear.
It's crisp and mild, and high in potasium.
pico de gallo [PEE-koh day GI-yoh]
Spanish for "rooster's beak", pico de gallo is a relish made
of finely chopped tomatoes, onions and jalapenos.
