NY MAG SAYS: The name means "holy water" in Italian. But secular types shouldn't read too much into that-any worshiping at Mario La Manno's laid-back, candlelit trattoria is for his rustic Italian cooking-thin-crust pizzas, simple pastas, and entrees like a red-wine-and garlic-sauced pork tenderloin. And the holiest water on the premises comes in a bottle with a Calabria label.

NY MAG SAYS: For Williamsburg hipsters who are slowly being priced out of their hood, Anna Maria's provides a taste of the old days when thing were still cheap and authentic under the L train. Two dollars will buy a thickish slab of cheese pizza--slightly oily but better than average, and large enough to keep a hipster's jeans safely around his hips. $3.50 will buy some more vitamins, in the form of a specialty slice topped with a veggie and/or meat combo. A soggy $4 calzone is worth it only if you need to fulfill your RDA of grease, but 8 smackers will buy a bona fide hot meal, like chicken cutlets or tortelloni, albeit on a disposable plate. All of this affordable nourishment is available late into the night, so starving artists, as well as crowds of drunken bar-goers, can fuel up whenever inspiration strikes

TIME OUT NY SAYS: Though its name means "hugs and kisses" in Italian, Baci & Abbracci carefully balances its grandma-style Italian rusticity with a Euro-chic sensibility. Subtle architectural touches, like saucer-shaped light fixtures and a chrome-furniture-filled back garden, lend the casual eatery a modern, space-age look. The old-world influences pop up in the kitchen. The bulging wood-burning oven (imported from Naples) evokes the homeland, and Sorrento native Francesco Mastellone tosses the pies. In addition to pizzas, the menu includes classic dishes like sauteed calamari and veal milanese. We especially liked the polpa e patate appetizer, meaty hunks of octopus and boiled potato slices tossed with slivers of zesty raw garlic, olive oil and plenty of parsley. We also enjoyed a sauceless pizza topped with chewy smoked mozzarella, strips of mild pancetta and caramelized onions. Unfortunately, the crust lacked the crispness of a perfect thin-crust pie. A dessert, torta di nonna, with custardy sabayon, chocolate-cream piping, and crushed, toasted pine nuts and pecans, was named for -- you guessed it -- grandma.

SHECKY'S SAYS: Chef Diego Gonzales is no newcomer to 152 Metropolitan Ave. in Williamsburg: he was the chef at the location's former Spanish restaurant Zipi Zape and will be taking the helm at its newest reincarnation, Barberry (which, despite the images of tartan its name may conjure, serves Mediterranean food). Signature dishes include grilled sardines, frisée salad with honey-roasted walnuts, and chocolate souflée--although the typical burgers, sandwiches, and steaks are also on the menu. NY MAG SAYS: Williamsburg's Beco has flown pretty much under the radar during the month it's been open—maybe because it's located in a sort of Williamsburg-Greenpoint netherland, but also because the owners wanted to keep the place a neighborhood secret while getting it off the ground. Rather than a full-blown restaurant like Miss Favela, David Giddings says he and his partners envisioned it as a modest São Paolo boteco, where you can laze about while popping made-to-order pão de queijo and sip cocktails made with fresh passion fruit and pressed sugar cane. As Giddings describes it, the décor harks back to the days of Pele, and "doesn't scream 'Brazil' in your face, but it's more like what a boteco is—a real hangout." Starting next week, you'll be able to hang there during a brunch that will include açaí and granola, omelettes, bife a cavalo (Brazilians refer to their steak and eggs as "steak on horseback"), and a feijoada that's prepared over the course of two days by a Carioca chef, Casia Steinberg (Fabiane Lima, the Brazilian owner of Fabiane's, also consulted on the menu).

SERIOUS EATS SAYS: The failings of New York's Viet restaurants usually occur in a combination of three ways: poor quality of ingredients, inattention to technique, or an underestimation of the audience's appetite for spice. Bep, which sets up every Monday inside Williamsburg's Simple Cafe, is an ambitious young upstart in the city's Vietnamese dining scene. By limiting its scope to a weekly special of home-style dishes, Bep strives to offer the piquant flavors most Viet restaurants fall short of delivering.

In Vietnamese, the word "bep" evokes the cozy warmth of the cooking hearth, so it's surprising that Bep's best dishes are not the comfort classics. Rather, Bep excels at the ubiquitous staples that almost every Viet restaurant offers (cha gio and thit nuong). What distinguishes Bep from competitors, however, is their use of high-caliber ingredients while keeping close to Chinatown's portion sizes and price points. And Bep's menu is a thoughtfully edited one--key proteins are replicated in several dishes, allowing Bep to keep quality high and overhead low.

Three years ago, he and partner Andrew Tarlow restored a 1927 Brooklyn diner (now Diner), preserving its quaintly dilapidated ambience while applying a veneer of hipness and-most important-assembling a talented kitchen. They can now be found, at Bonita, Firth and Tarlow's new cantina, four blocks away. In their trademark preservationist style, they've kept the former Latino lunch counter's sign trumpeting comidas criollas, the row of stools opposite the open kitchen, and a few nods to the old menu, like plantains. But cheese-dusted corn on the cob, fish tacos, and chiles rellenos, not to mention soft light flickering off multicolored tiles, set an entirely different tone.

L MAG SAYS: Last Friday I ate and drank at Cornichon, a new wine bar/cafe/small plates restaurant on Grand Street in Williamsburg. What they sell is terrific--lovingly presented cheese and meat plates, cheap bottles of good French wines--but the decor made it seem as if they had rushed to open a week before they finished decorating, and then just decided against finishing. The front and back are pretty attractive--lots of pale, neutral greens and blonde wood--but the spacious area in the back (where my friends and I stayed well into the night, and were always the only people there) felt like a spare afterthought, with naked wooden tables, benches, empty dark green walls, and that's it. Right angles and right angles and unset tables. The food was so carefully prepared--the crudite salad arranged with wedges of boiled egg, ruby cherry tomato halves, and slivers of avocado, drizzled delicately with some kind of rich, opaque dressing--that it's mysterious why more consideration hasn't yet gone into making the place more comfortable. But the owners (all French) were sweet and eager to please (they gave us free Champagne and encouraged us to sign the mailing list) that if they softened some of the pointy, lonely edges, I'd happily go back. Especially in the summer, when their lovely back patio opens for warm-weather wine. Like white zinfandel.

NY TIMES SAYS: A GOOD fried chicken is hard to find. Especially in New York City. But the fried chicken at Egg in Williamsburg, Brooklyn: it’s good. So good I watched a Southern-born friend devour nearly two whole portions in one sitting. So good he returned the next night with other ex-pats from Dixie for more. The biscuits it comes with are pretty much picture-perfect, too, and collard greens, obviously and righteously, round out the plate ($16). I prodded George Weld, Egg’s owner and one of its cooks, for his method. “I make it how my grandmother made it: shake it in a bag with flour and fry it.” (At further prodding, he admitted that he brines the birds beforehand, which Grandma didn’t do.) He said the first restaurant cook he’d seen frying chicken that way was Stephen Tanner, when Mr. Tanner ran the stoves at the former Pies ’n’ Thighs. They struck up a friendship and found out they share a favorite spot, Flip’s Barb-B-Que House in Wilmington, N.C., near Mr. Weld’s childhood home and Mr. Tanner’s grandparents’ place. Now Mr. Tanner cooks in Mr. Weld’s kitchen, and he helped develop the lunch menu Egg added last summer, including a sloppily overgenerous chorizo and egg torta and a very fine hamburger, and the new dinner offerings. (Egg used to share its space -- a narrow, high-ceilinged spot on Fifth Street -- with Sparky’s All-American Food, a hot dog operation that served lunch and dinner until its owners decided to focus on their Manhattan location last June and turned the space over to Egg.) Most of the dinner menu is guileless, direct and plain good eating. A hulking pork shank ($16), braised to a lacquered darkness, comes scattered with a mix of chopped garlic and herbs -- like an informal gremolata -- atop a mound of yellow Anson Mills grits. The kale and dumpling soup ($6) couldn’t be more simple -- an alliance of greens, carbs and soothing, full-flavored broth -- or better on a cold night. Other dishes are distinguished by the conscientious approach of the kitchen. The pimento cheese toast that is part of the “sample plate” ($10, also including a beet-pickled egg, a deviled egg and a pile of country ham shavings) is better than most because the kitchen makes it from scratch, with Grafton Cheddar cheese and freshly roasted peppers. The house version of Tater Tots -- miniature hash browns that it serves at breakfast -- accompany a good grass-fed rib-eye steak topped with blue cheese ($24). Fried nearly black, they are a blast of creamy, buttery pleasure in a crisp potato shell. A couple of dishes -- fish over a hominy and root-vegetable stew ($18), and a bowl of freshly made pasta with mushrooms ($13) -- missed their marks, but they were exceptions. Egg offers two desserts ($6), though there’s only one choice for me: a slab of golden yellow poundcake, toasted crisp and topped with lemon custard and vanilla ice cream. The dessert had its origins back in Mr. Weld’s family kitchen, just like the fried chicken. It was his mother’s favorite dessert, and on some mornings after she baked it, she’d serve it to young George for breakfast, toasted with and smeared with butter. “It was the luckiest breakfast to get,” he said. WE SAY: Standing in line at Williamsburg’s newest barbecue joint, I witnessed something close to a miracle. The strangers on either side of my party wanted to engage in conversation. Card-carrying hipsters, notorious for cold shoulders and silent treatment, wanted to discuss the meat counter where we were heading. They asked questions and offered ordering advice, like one pound of pork shoulder should be enough for two people. For a restaurant to create an atmosphere of engagement is a feat that will keep crowds coming back, despite the long waits in line.

Fette Sau, which means “fat pig” in German, opened its doors in March 2007, brought to us by the owners of Spuyten Duyvil -- a favorite beer garden across the street. Kim and Joe Carroll transformed a former auto-body repair shop into industrial barbecue cavern with a whole wall of hand painted cuts-of-meat, a fake fire burning on the television screen and heavy picnic tables -- both inside and out. At the bar in the back you can choose from a wide selection of whisky or take a pint, quart or half gallon growler of beer back to your table to wash down the greasy meats.

At the meat counter, if it's pork shoulder you want, arrive early. I have yet to try it, since the kitchen can’t keep up with the high demand. My reluctance to taste the recommended alternative, dissipated the moment I bit into the buttery moist pork belly, piled high on my butcher paper-covered tray. The brisket and sausage is also a hit. My only complaint is, with the exception of the smoky pork-laden baked beans, the side dishes are a huge let down and should be avoided. The broccoli salad was soggy with vinegar and the potatoes in the potato salad were undercooked and needed salt. Pay homage to Dr. Atkins and stick to the meat counter. And if you’re a vegetarian, just stick to the whiskey or beer. We’re hoping the Fette Sau will hire a pastry chef to prepare a juicy key lime pie to cleanse the palate after the full meat encounter. Until then, there’s beer, whiskey and the company of strangers.

NY MAG SAYS: In no time at all we zoom over the Williamsburg Bridge to the charmingly rustic Fiore, with its spiffy service, flea-market treasures, and enticing Italian home cooking. Warming up over a bottle of Mount Veeder Cabernet, the six of us share the excellent grilled pizzas, all of them: bianca with cheese and prosciutto, a peppery two-cheese pie, and the house's namesake, paved with zucchini and perfumed with truffled Robiola cheese. Then it's on to a runny Burrata, a mound of fried calamaretti and zucchini, and a salad that mixes roasted butternut squash, radicchio, Pecorino, and walnuts--enough to share. When Teodora's chef-owner Giancarlo Quadalti finished restoring this crumbling little building, he realized he didn't want to run a trattoria beneath his own duplex, so he persuaded chef Roberto Aita of Roc to cross the bridge. Now Quadalti stops by for dinner often, joining us tonight for cavatelli with broccoli rabe and sausage, and monkfish with roasted garlic, preserved lemon, and caper sauce. I've tasted three versions of bucatini all'amatriciana in the past week, and this one, just $9, is the best. Twelve dollars for half a giant-size chicken on roasted potatoes gives new strength to the dollar. Next time I'll ask for the herbed fries or roasted potatoes "extra crispy." Of the $4 desserts, I like the polenta cake and a primitive apple torta, but the tiramisu has uptown class. Our penny-pinching pals with a car are already planning an encore, and I'll be joining them.

Generous toppings grace the more than 20 pies, organized by first, second and third generation. The thin crust, charred black around the edges, adds a smokey dimension, which pulls together the oddball Salsiccia Di Agnello, with lamb sausage, two cheeses and pistachios. WE SAY: This family-run bakery has been in the neighborhood for years and has never raised their prices. For about $2 you are hooked with a massive bacon egg and cheese sandwich and another 50 cents you get a great coffee (with warmed milk). The employees there have no attitude and will even teach you a little spanish if you're nice. They also have an ass-kicking selection of other cheap ($2.50) sandwiches which will put you in a food coma for the remainder of the day - I go with the pork or the chicken sandwich personally. Everything is so good and cheap - you'll find yourself eating a chicken soft taco at anytime of the day - even if you're totally full!

NY MAG SAYS: Miranda is a mom-and-pop shop done up in the simple style of a neighborhood trattoria. Sasha Rodriguez, the Queens-bred daughter of a Dominican father and Irish-American mother, runs the kitchen, while her fiance, Mauricio Miranda, of Guerrero, Mexico, works the dining room like a young Silvano Marchetto--greeting guests as if they were long lost relatives, recommending bottles of (often organic) wine, and occasionally breaking into a little cha-cha-cha dance whenever the joy of owning and operating a restaurant with the woman he loves becomes too much.

The couple met while working at Verbena, started dating, and soon dreamed of opening a place of their own. What kind of place they didn't know. Subsequent stints at Alto and the C.I.A. Italian program (Sasha) and L'Impero and Spigolo (Mauricio) convinced them that combining the Latin American cooking they grew up on with their love for Italian food was a good way to go.

And for the most part it is, thanks to the fact that the menu doesn't hit you over the head with the fusion conceit. The problem with cross-culinary cooking of this sort is that it can seem far-fetched or forced, like the gastronomic equivalent of an arranged marriage. Not so here: Latinized arancini are a little too soft and crumbly on the outside, but they're dappled with a bright tomato sauce and filled with a winning mixture of chopped spinach and Mexican chorizo. A salsa guajillo is a good, smoky match for breaded and fried smoked mozzarella. Other appetizers, like mussels marinara, and a sparkling salad of baby romaine, ricotta salata, and sun-dried tomato, for example, simply forgo fusion altogether.

BROOKLYN PAPER SAYS: On a recent Monday night, Williamsburg's newest sports bar was packed. Everyone in Mulholland's had one thing in common: a thirst for free beer. Free beer may, in fact, be the only explanation for beefy fraternity types in football jerseys and the neighborhood's trademarked bespectacled hipster to be mingling; when I returned the following Wednesday, the bar had lost the grandeur of its opening and was nearly empty. Far from the energetic nightspots that Billyburg is known for, Mulholland's felt more like a bar in a strip mall. But Sean Mulholland, who owns the watering hole along with his brother Bill, insisted that the neighborhood's chic, young residents are really "closet sports fans." The Mulholland brothers spent years working in bars, clubs and restaurants -- most recently Eugene, a glossy lounge in Manhattan -- and had been looking to buy their own spot for the past two years. Although they initially looked at Manhattan's Lower East Side, Williamsburg's cheaper rents and less commercial vibe won them over. "We just fell in love with the neighborhood," said Sean. "It's like a small town -- everyone's really sweet. It's almost like there's a Midwest feel, which we think is awesome!" Local residents might quibble with his assertion that they're akin to Midwesterners, but the Grand Street corridor is quickly becoming more high-end, and therefore more open to a wider variety of nightlife options. WE SAY: Much better than you would expect from bar food and at a very reasonable price. Lose yourself in the best beer menu in the city, while dining upon any of their tasty burgers including a portabello, vegetarian, or and old-fashioned beef burger. Italian specials are usually tasty, and daily fish grills are not to be missed. Mussels are surprisingly fresh (and cheap) and the spinach quesadillas are wonderful.

On the downside the jukebox is horrible and some fool will surely choose "Stairway to Heaven." And sadly, they no longer offer any $2 pint specials.

NY PRESS SAYS: There is a smattering of tapas joints amid the ever-expanding dining landscape of Williamsburg, and most of them feel about as authentic as the infamous "loft-style" luxury apartment buildings that have been popping up in the neighborhood even more rapidly than restaurants. That changed three months ago, when Nita Nita, a tapas bar actually worth venturing into, opened its doors. Plate-glass storefront windows and a yawning set of doors reveal a candlelit interior with warm tones and clean lines that don't try too hard. Nita Nita's menu is Spanish-inspired and eclectic and the recipe list, like the decor, is pared-down. And with a short but appealing selection of wine, food and cocktails, patrons feel like they've stepped into the local bar they've always looked for, but classier, and with a delicate buttery scent calling to them from the kitchen. The cozy interior of Nita Nita was the perfect spot for dinner one rainy summer night since the place never feels too crowded, but there are always just enough people chatting with owner Samantha Di Stefano, or petting the part-time resident dog for you to feel welcome....An alcove behind the kitchen offers more seating, a well-stocked jukebox and a door to the back garden, which, while we visited, was being steadily drummed by rain. Although Nita Nita's mixed drink specials ($10 each), including the Tequila Mockingbird and Ginger Rummy, are the most innovative part of the menu, an insidious hangover prevented me from diving into the cocktail options. However, compelled by my duty as a responsible journalist, I returned the following night to try the Barton Pear, an insanely good combination of Grey Goose Lapoire, fresh pineapple and orange juice, seven up and a few other ingredients I failed to note as the drink went to work on my short-term memory. We started with an appetizer special of brie on a toasted baguette alongside a roasted leek soup ($10). The soup smelled great, but turned out to be somewhat bland, though inoffensive, sprinkled with refreshing parsley to give it a little kick. The bread was fresh and flaky, and the brie warm—the perfect addition. Next, we ordered the sautéed greens and shaved parm ($5) next, and got exactly what you'd want from this simple dish. Chopped collards were cooked in butter just long enough to take the edge off the bitter vegetable, release its flavor and keep a crisp freshness intact. Unfortunately, the Mojo potatoes ($5) were disappointing, drenched as they were in a peppery red sauce, but oddly lacking in spice. A salad of cranberries, sliced almonds and feta dressing over pedestrian mixed greens ($6 special, price varies) is a fresh and satisfying, if not massively original, flavor combination. My friend had the Mojo chicken ($7) next: three drumsticks nestled together with a cucumber dipping sauce on a white porcelain plate. The meat was tender, and fell off the bone easily, with a slight spiciness nicely complemented by the cool cucumber. Meanwhile, I inhaled the Cheese Board ($12), a delightfully stinky mix including a sharp aged Gouda that I could taste in the back of my mouth, complimented by apple slices and quince paste. The bar pizza ($6) is a light, cheesy take on Turkish-style pitza, with fresh mozzarella and just enough sauce drizzled over a nicely crisp flatbread. We finished off our meal by sharing a chocolate chip cookie ($2)--after such girl-centric conversation we chose to further the stereotype by daintily considering our figures. The dessert was phenomenal. Though it tasted like almost pure sugar, its gooeyness and melt-in-your mouth perfection was like some long-forgotten childhood memory.

METROMIX SAYS: Chef-owner Lorenzo Gantonio has plied his wares in European hot spots like Nice, Morocco and Monte Carlo. Now he's set up shop on an unassuming corner in south Williamsburg, and he couldn't be more enthusiastic. After moving stateside in mid-2008, Lorenzo unabashedly "loves New York. I love New York!" and so he decided to open a permanent Gotham home for serving up crepes and light Mediterranean fare. The long list of crepes includes both savory (brie and apple, mushroom) and sweet (Nutella, French chestnut, Suzette) offerings, and the prices are recession-friendly at $3.50 to $6 a pop. The entrees are pasta-centric, with a cream, bacon and parsley dish and a lighter chicken with white wine sauce. We're not sure the former tenant, Paper Moon Cafe, was around long enough to elicit any pangs of nostalgia, but hopefully Lorenzo's passion for the city and simple cuisine will prove a better recipe for success.

Were you one of those kids who sat in morning math class dreaming of steam tables longer than the Queen Mary, behind which stood women clad in white waving giant spoons? Do you prefer your veggies on the mushy side? When you go to Vegas, do you only pretend to gamble, then run off to the buffets? If you can answer 'Yes" to any of these questions, then Peter's is your place. Located on the quintessential block of Bedford just above the first stop on the L, Peter's Since 1969 is the restaurant's proper name, emblazoned across the front in large block letters. It refers, somewhat mournfully, to a butcher shop named Peter's that flourished on this spot for 38 years, which the new restaurant has usurped. The old Peter's was one of two competing butcher shops on the block—one Ukrainian, one Polish—that epitomized the old Williamsburg....Gleaming white tiles and hooks that once suspended kielbasas like giant curving phalluses are the only vestiges of the original shop. Peter himself hung up his apron late last year: According to a friend who's a longtime resident of the block, he decided to take the $8,000 per month he'd been offered as rent and retire to Long Island. His picture smiles down benevolently from a frame by the front counter, one of the neighborhood's secular saints. Behind that counter, one now sees a giant rotisserie churning behind a smeary pane of glass. The chickens are the best part of the new Peter's—big, shambling creatures rubbed with herbs and sloughing moist flesh. You won't need a knife, or even a fork. The price is right, too—one quarter bird plus two sides and "corn bread"is $8.95. A half-chicken is only a dollar more. Peter's calls them French-rotisserie chickens, but there's really nothing French about them except the word "rotisserie." The supposed Frenchness is only one of the culinary mysteries of Peter's Since 1969, which should really be called Peter's Since 2007. Jumbled on the counter, a collection of pretty red Le Creuset casseroles holds the restaurant's other offerings, constituting a steam table in disguise. As the multiply pierced clerk raises the lids in succession, you'll discover decent mashed potatoes and mashed sweet potatoes, leathery sautéed corn, green beans and broccoli oddly cooked together, chopped spinach en casserole, pallid mac and cheese, yellowish stewed okra, and bread-crumbed cauliflower. The selection varies, but most of the sides are united by two qualities, overcooking and underseasoning—perfect pap for invalids and hungry schoolchildren.

NY MAG SAYS: It's usually not a promising sign when a restaurant's outdoor patio is enclosed by a fifteen-foot-high barbed-wire fence. At Pies-N-Thighs, though, you might say it's part of the charm. The makeshift southern-style kitchen that operates out the back of Williamsburg's Rock Star Bar has an air of what might politely be called a rough, postindustrial outer-borough chic. In other words, it's a dive, but a dive in the best sense of the word. Stephen Tanner and Sarah Buck, two refugees from nearby Diner, cook the kind of honest home-style vittles you might hope to stumble upon while tootling along some southern backroad. He oversees the pit-smoked pulled pork, the fried chicken, the juicy burgers, and the spicy macaroni and cheese. She bakes the breads, the biscuits, and the type of picture-perfect double-crusted pies that, when customarily placed atop a windowsill to cool, hoboes find hard to resist. All of it can be gulped down at a slim counter inside the greasy kitchen nook that formerly served as a beer closet. NY MAG SAYS: When Lawrence Elliott's Bedford Avenue coffee shop, The Read, fell victim to rising rents, Elliott set his sights on the Southside, envisioning a neighborhood cafe with the best baked goods in Williamsburg. The stacks of used books are gone, but the new space, with its wide-planked wood floors, vintage hardware, and charming backyard garden, still has a stay-all-day feel. Locals with day jobs line up in the morning for strong coffee and fantastic house-baked morning glory muffins and scones. Later in the afternoon, crowds of stylish freelancers file in for the simple sandwiches or homemade soups, no-attitude service, and free WiFi. Laptops are verboten after 5:30 p.m. as the place transitions into a cozy dinner spot with a streamlined menu of unpretentious American entrees like pan-seared duck breast and buckwheat veggie carbonara. On the weekends, the cafe is packed with couples settling in for lazy brunches of basic eggs with shoestring hashbrowns. Still-warm chocolate chip cookies and Irish coffee are favorites for dessert. NY MAG SAYS: Once an industrial space, this high-ceilinged room now feels more like a social club, with its creamy wainscoting, low lighting, and small tables clustered around a central bar. By day, the neighborhood freelance brigade settles in with laptops and books; at night, twentysomethings slide into the benches to share stories and plates of slightly old-fashioned comfort food. (People-watching is an indoor sport here, since the restaurant is several steps above ground level and there aren’t any large windows facing the street.) Some menu choices are simple to the point of tedium, like the cucumber-vinaigrette salad. A better bet is the tangy, crisply topped macaroni and cheese. (Spring for the optional bacon and the oozing dish gets crowned with richly marbled strips.) The bratwursts—both traditional and vegetarian—also hit the mark, with plump, juicy sausages and sauerkraut overflowing the buns. The namesake teas are here in force, with dozens of brews including mate, greens, and bracing British blacks. These come in large glass beer mugs, so watch out for that heat conductivity.

NY PRESS SAYS: As far as soft openings go, Cal Elliott’s debut of Rye snuck in with barely a murmur.Situated at 275 S. 1st St. in Williamsburg,Rye’s lovely wood, and glass doors give no indication there is food and drink to be had behind them. And given the sparse crowd last night, the former Dressler and DuMont co-chef has kept it low key.

As they work out the kinks, Elliott’s menu isn’t set in stone. Though, he is off to a good start with his appetizer choices like the tender seared sea scallop ($10), roasted beet salad ($9) with an amazing butter sauce, and Berkshire pork belly ($12) with salty beluga lentils. I wasn’t too impressed with the entrée options, but did settled on a tender, well crisped piece of wild striped bass ($24) that came with succulent cockles, mussels, a lone grainy little neck clam and a pile of bland risotto.

The cocktail list is fun, but after a tequila drink made with a touch of absinthe, I decided to stick to a lovely, slightly spicy bottle of Hudson Valley pinot noir from Millbrook Vineyards. Given, Rye is so new it doesn’t warrant a true review yet, so, while they add finishing touches (like hooks on the long, dark bar or some sort of decoration to the blank wall across from it) the large, high-ceiling, and low-lit space will flourish as word of mouth makes it the next hip place to dine.

EATER SAYS: The last wafts of the former Oznot's Dish restaurant on North 9 and Berry in Williamsburg are being flushed out with fish sauce. The space has been humming with activity, with construction and installation of a new restaurant concept called Silent H, and a potential slated opening for February. Just ask the skinny dude smoking a cigarette who is always out in front. His name is Vinh Nguyen. He's young and scraping by, but he is passionate and resourceful and he has a heart of gold and an awesome looking menu to come. I think his inspiration to start his own business came from his days when he bartended and managed Father's Office in Santa Monica (LA), where he trained under the tutelage of the owner Sang Yoon. There he fell in love with beer and business, and the concept that you can impose and dictate a simple, yet meticulously crafted menu with no customer alterations, something that might have to do with the fact that Vinh refuses to serve 'pho' at his new spot. And I am sure his Vietnamese heritage and his mom's cooking factors heavily in here as well. Since he has been in NYC, he's been working in catering before breaking off to focus on launching his own restaurant. Vinh is a sponge for knowledge across food, brews and booze and he is one of the funniest, friendliest fuckers you could meet. More importantly, he is bringing badly needed, authentic-inspired Vietnamese cuisine to the hood and he promises its not going to be done like the vomitous SEA and Planet Thai compromises of southeast asian cuisine are. (Sorry no hanging bubble chairs ever here.)

WE SAY: If you’re lucky enough to be seated in one of the dark mahogany booths, scavenged by Spike Hill co-owner, Tom Schmitz, you’ll find the perfect refuge from the packs swelling outside on Bedford Avenue. The bar in the front offers twelve rotating draft beers and a healthy selection of scotch. Inexpensive dishes range from traditional pub fare like Fish & Chips to neo-American comfort dishes like Blue Point Oyster Po’ Boys with chipotle lime mayonnaise.

While the Thursday night open-mike musician set up his microphone, appetites were whet with a Kielbasa starter -- the one hat-tip to the neighborhoods’ previous settlers. The Buffalo Wings were average and the Oyster Po' Boy was more fry than oyster. You're best served if you think of the joint as a watering hole where carnivores and pescetarians can nurse a hangover or take a preventative approach to drinking by laying down a greasy base. while imbibing.

When the check arrived there was a whistle of shock and delight. Though not officially on the menu, the majority of the table had ordered the Spike Hill Burger. The dangerously low price of $2.75 per burger was responsible for the impossibly cheap bill.

Fridays throughout the summer, Spike Hill is offering $1 Blue Point oysters and Little Neck Clams between 5-8 PM.

WE SAY: Joining Zenkichi and Bozu, you can add Sui Ren to the pantheon on neighborhood izakaya hotspots. The menu, put together by owner Morgan Chang, formerly of Kai and chef Jun Hiroshima, from Bond St. Sushi focuses mostly on yakitori (the grilled skewers) and kushi katsu (fried skewers) though the concoctions—light on the tongue, hearts, and offal in general—aren’t likely to be found on a traditional Osaka menu. Of the cold skewers—perfect for summer—the bachi maguro to udama (marinated big eye tuna, soft yolk quail egg, and Korean seaweed; $8) and the tomobara (24-hour slow poached shortrib and baby turnip; $7) have already proven themselves popular, as have the nasu dengaku (Japanese eggplant with mascarpone sweet miso; $7) and the yaki gaki (grilled Malpeque oyster with spiced beurre blanc; $8). With dishes ranging from $3 to $12, Sui Ren can skew either towards cheap snack joint or—thanks a nicely-lit room and rather romantic wooded exterior, a la Bozu—a splurge on date night. If you go for the latter, be sure to order the panko-fried mackerel or grilled Japanese smelt. Nothing says “I love you” more eloquently than supporting sustainable fisheries. --Nick Mosquera

CITY SEARCH SAYS: This destination for Mexican food has a buoyant, artisanally crafted scheme of blond wood, turquoise walls and a red undulating border that immediately refreshes the eye. While the seating is vast, it's pleasingly lofty and group-ready. The restaurant, whose name loosely translates to "pimp taco," is drawing a mostly neighborhood crowd. Opened by a Texan and Californian who missed the food they grew up on, the restaurant uses organic, authentic ingredients. The lime-garnished tacos burst with such fresh fillings as slow-braised pork, snappy shrimp with marinated cabbage, and cool, marinated baby cactus. Along with a vibrant, chopped pico de gallo and lively guacamole, the queso fundido--melted cheese that's piqued with bacon, smoked chiles and onions--is a sumptuous alternative to nachos. And all are accompanied by crisp homemade tortilla chips. The pozole verde soup is only for hominy fans, but the salads are rich enough for meaty appetites, too. The cocktail ingredients are fresh and high-quality. Try a house margarita or an iced beer with lime, chile, a salted rim and splash of tomato--a stimulating take on the bloody mary.

NY MAG SAYS: Imagine if Morgan Spurlock were to open a burger joint where the hamburgers were fashioned from contented, grass-fed, sustainably raised cows. That would be something like the situation at Urban Rustic, a grocery store in Williamsburg. Co-owner Aaron Woolf also happens to have directed the documentary film King Corn, and as it was in his film, Woolf’s mission here is to raise awareness about where our food comes from as much as it is to sell groceries. At Urban Rustic, the goods come mainly from local farmers, butchers, cheesemakers, and assorted purveyors. The 2,600-square-foot space is designed, in the current fashion, to look like a sleepy nineteenth-century general store, but has just about everything you’d expect to find in a modern foodie emporium, including a juice-and-coffee bar and an elevated dining area. Every item for sale, from the biodynamic yogurt to the Brooklyn bath salts, has a story, and, like good documentarians, Woolf and his partners plan to tell each one.

WE SAY: With a festive, chatty bar up front serving good margaritas and icy Coronas, and a delightful open-air garden out back, Vera Cruz delivers inventive if inconsistent Mexican food at reasonable prices. Standards include hearty burritos, meat or veggie-filled soft tacos, and good rice and beans along with a smattering of more creative dishes. The salsa can be watery, and the guacamole seems to be cut with cucumber relish, but both do the trick, especially after you've had a couple of margaritas. More adventuresome palates will enjoy the grilled corn on the cob, served with mayonnaise and cotija cheese, or the southwestern salad topped with juicy grilled portabellos, tomatoes, and chunks of tepid cactus. Don't count on the service here, though, which is notoriously slow, or simply absent.

GOTHAMIST SAYS: The sibling owners of Rose Live Music on Grand Street in Williamsburg have given quite the face-lift to their eponymous subterranean restaurant. The intimate urban-rustic haunt has been renamed Vutera, and the exposed brick walls and wooden beams are now bathed in a candlelit glow for your dining pleasure. New chef Molly Del Monte, the former sous chef at Little Giant, is introducing a Mediterranean menu with a local-and-seasonal angle, complemented by a wine list curated by manager Hugh Crickmore (Mas). Grub Street has photos and the full menu, which features such delicacies as parsnip gnocchi with beet-green pesto, braised lamb shank with red wine and creamy polenta, and an appetizer of Spanish-mackerel escabèche. An review on Strong Buzz deems the place "immensely comforting. It’s the kind of place that beckons like a blazing hearth in an ice storm."

NY MAG SAYS: Finally, the raw bar the kids in Williamsburg have long demanded! Balthazar bartender Danny Minch and Barrio Chino owner Dylan Dodd have opened Walter Foods at 253 Grand Street. Justin Ernsberger, formerly of Clinton Street Baking Company and Aqua Grill, brings his love of sea creatures to the menu -- lobster appears in five dishes. This is good news for anyone on the L train looking to score some clam chowder this fall; if you're not, there's a burger and fried chicken and some steaks for you. Given Minch's former life as a bartender, it's no surprise that the cocktail menu is more robust, if not a little old-timey: See Sling, Singapore for details.

WE SAY: On a less-traveled block at S. 2nd and Wythe lays the newly opened Williamsburger, a joint whose name leaves little to the imagination. Indeed, the cuisine is your standard cornucopia of artery-clogging classics -- burgers, milkshakes, onion rings, fries, hot dogs, and even pierogies populate the menu. The simple interior of the restaurant, which isn't yet serving alcohol, further bolsters their nothin' but meat atmosphere.

Williamsburger’s mantra is “beefing up hipsters,” and needless to say, with a slogan like that A LOT could go wrong. However, the fare is pretty damn satisfying. All of the burgers are made with Hereford Beef from Washington State, and are served with a fresh and delicious side of fries. A few salads as well as a chicken burger and a tuna burger work as alternates for those of the non-beef persuasion, although everything comes drenched in dressing and/or mayo. The $4 milkshake is overpriced, but so delicious (Cappuccino and Butterscotch are particular gems) that it might be worth the splurge.

The stoner population of the South Side will surely embrace this place more then they seemed to enjoy its previous embodiment as Fire and Ice bar -- and we have a feeling that towards their later PM hours, delivery will boom. But the real test will be to see if Williamsburger can avoid almost certain defeat from neighborhood staple DuMont Burger. After all, DuMont has a liquor license, is only two blocks away on Bedford, and their gourmet burger prices are comparable. For now we wish Williamsburger good luck, ironic menu, décor, and all. -- Elizabeth Brady

WE SAY: In Williamsburg, vinyl-sided buildings are as ubiquitous as skinny, stretch jeans with white high tops, but the owners of Zenkichi gave their vinyl-sided building a facelift, converting it into something utterly unique. The plastic clapboards of the building’s edifice are masked in dark wood planks – the perfect exterior to the hidden Japanese tapas oasis within.

North Sixth is the Williamsburg strip where most restaurants conspicuously flaunt their crowds by packing them into large, noisy open spaces. With no sign to mark the entrance, Zenkichi is easy to miss, but inside is a welcome alternative to this trend. Walking in, we felt like we’d stumbled upon a cross between a Zen garden and a three-leveled carnival house-of-mirrors. The host led us up the stairs and through a disorienting maze to our own private cubby booth – complete with bamboo blinds and equipped with a buzzer to ring for our waitress. We felt like we entered a Japanese film noir where a smoke machine was the only missing element. Zenkichi is one of many izakaya spots springing up around the city. The Japanese equivalent of a tapas bars, izakayas are great places to try a variety of little dishes while sipping sake. We decided against the Omakase for Two -- ten tastes chosen by the chef for $88. Since we didn’t want dessert and were curious about a few items not on the tasting menu, we opted to make our own selections.

We started with two raw dishes, Tako Wasabi and Maguro Carpaccio. The briny taste of wasabi-cured raw octopus was a refreshing spin on the sushi we were craving. More a condiment than a dish to satisfy hunger pangs, the Tako was nice light start on a hot summer night. The freshness continued with a traditional Japanese tuna dish, Maguro Carpaccio. The tuna was lightly coated in a sweet sesame marinade and wrapped around chilled, thin slices of radish and chives.

Next we moved on to something more substantial with the Pork Kakuni. A complex caramel broth, at once sweet and salty, seeped from the pork belly. It was among the best we’ve eaten. Cooked for three days, the tender, slow-cooked pork can be lifted from the fatty belly with an easy tug of the chopsticks. Equally satisfying was Zenkichi’s generous portion of Saiko Miso Black Cod. The hint of miso absorbed in the firm fish was a salty reminder to take another sip of sake. Less successful dishes included the Japanese Mushroom Gratin and Umaki and an omelet wrapped freshwater eel. Despite what the menu’s claim that the Japanese Mushroom Gratin contained Enoki, Simeji & Oyster mushrooms, we only tasted straw mushrooms which were lost amid the creamy bechamel sauce. And though the omelet wrapping the freshwater eel in the Umaki was delicious, a larger piece of eel would have allowed the fish flavor to go head to head with the sweet egg.

Since the importance of drinking is almost equal to eating at an izakaya joint, we were disappointed to find that the sake menu had only a limited selection of inexpensive sake. The cheapest (and only) carafe was $45 and the average bottle of sake was in the $50 to $60 range. Opt for the summer sake tasting menu where you can sample three glasses for $18.

Left to our own devises, we ordered seven dishes -- more than enough food for two. The bill for two before drinks totaled $60. With friendly, attentive service and many dishes we didn’t get to try, we’ll be returning soon for more.

Entrées include the lomo asado con yucca y chimichurri, traditional Argentianian cut steak with soft yucca cake and chimichurri sauce; a risotto con pollo, Arborio rice, peppers, onions, tomatoes, sweet plantains; salmon miso-honey with baby bok choy; a palak paneer, creamy curried spinach with fried homemade paneer of tofu and basmati rice.
