Scrapple, Heart Steak, and Deep Fried Hot Dogs at St. Anselm

Joe Carroll owner of Spuyten Duyvil and Fette Sau has something new and delicious up his sleeve- ‚”a haute snack bar” named St. Anselm he’s planning to open next door to Spuyten Duyvil in late April. Originally Carroll planned to open a simple hot dog joint, but the menu has quickly expanded to include ‚”Newark-style hot dogs” which are deep-fried, stuffed into split pizza bread, and crammed with crispy potatoes, onions, and peppers.
According to Grub Street:

Other fatty delights will include scrapple, goetta, and sausages, all made in-house; relics like humble pie and chicken √† la king; a pork-neck-bone dish the Carrolls fell for in Las Vegas; and the ominous sounding Skin 3 Way. Regional sandwiches include Trenton pork roll (‚”Spam-ish and salty,” says Carroll) and beef on weck.

A larger selection of wine will be served than is offered at Spuyten Duyvil and Fette Sau, including Red Hook Winery’s Chardonnay and sparkling Brooklynbrusco which will be available on tap.

    The hot dog described above is actually a hybrid of the Rutt’s “ripper” style of deep-fried hot dog and the classic Italian hot dog popularized by well-known establishments like the aforementioned Jimmy Buff’s and the just-as-good Dickie Dee’s. Although NJ mentality would never allow for such a perversion of style, it does sound like a delicious proposition.
    Additionally, the Trenton Ham label is better known as Taylor Ham, a staple of the native New Jerseyan’s breakfast, preferably on a bagel with egg and cheese. I realize the product was originally (maybe still?) made in Trenton, but I have never once seen it called Trenton Ham in all of my years patronizing greasy spoons in Essex, Hudson, Bergen, and Passaic counties. Maybe it is a central/southern Jersey localism.
